Truita de patates
Ingredients
- 3~6 potatoes, depending on the size, approx. 1 kg
- 1 medium-size onion
- 4 eggs
Steps
- Peel and cut the potatoes into thin slices. Wash the sliced potatoes and salt to taste. Put them in a glass container with a loose lid and some olive oil. Place in the microwave at medium-high heat and cook for 20~25 minutes. You can also use the more traditional way which is to fry them in a pan, but do it at a low temperature so they don’t become crisp.
- Chop the onion thinly and sauté it in a pan with hot olive oil. Cook it to your personal taste. I prefer to cook it until the onion starts to caramelize so it gives a sweet flavor.
- Whisk the eggs into a large bowl. Add in the cooked onions and let it sit for a few minutes so the onions soften. A
- Preheat a pan to medium heat. Add the cooked potatoes to the bowl with the egg and onion and mix softly. Taste the salt level of the mixture, adjust to your preference if necessary, and add the mixture to the pan. Try that the potatoes are not very hot when you mix them with the egg, otherwise their heat will start to cook the egg.
- Cook each side for 3~6 minutes depending on your preference on the egg cooking level. There is always a big debate on the perfect cooking level of the egg, some people prefer it very cooked while some like it almost raw! Use a dish or a lid to flip to the other side.
The hard part: doing the flip!
Doing the flip can be a bit tricky, specially the first times.
The best way I have found is to use a smooth lid with no holes in it. I had to cut a notch in my lid so it fits around the pan handle.
You can also use a flat plate. The plate works best if it fits inside the pan, if it fits over the pan it is easy that it will slide and throw the egg all over your kitchen.
I like to add a little bit of oil to the lid/plate to help slide the mixture back to the pan after flipping it.
To do the fit, place the lid or plate over the pan and grab it firmly. Then to do the flip, accelerate the pan upwards and rotate it 180 degrees when it reaches the top. The upwards acceleration will make the mixture stick to the the pan while doing the flip and avoiding that it leaks through the pan sides.
